Cooking Time: 10 Minutes
Serving Size: 3-4 as a side
1 large bunch of fresh flat leaf parsley
1 red onion
1 tbsp lemon juice
1-2 tbsp olive oil
1/2 packet of pre-cooked quinoa
Wash the parsley, then finely chop finely.
Then chop the cucumber and red onion into slices/quarters.
Add in the pre-cooked quinoa, and mix all ingredients together in a bowl.
Add the olive oil and lemon juice, season with salt and pepper, and mix to combine again.
Serve with lunch or dinner along with your choice of protein and vegetables.
