Ingredients:
2 turkey fillets
100g ground almonds
50g flour
1 egg
1 tsp ground garlic powder
1 tbsp corn flour
1 1/2 tsp paprika
1 tbsp olive oil
1 medium sweet potato
1 cup of frozen peas
1/2 cup of frozen leeks
Method:
Cut the sweet potatoes up into fries or wedge shapes, leaving the skin on. Place them into a mixing bowl with the olive oil, corn flour, salt, pepper and 1/2 tsp paprika. Toss so the fries are coated and place into the oven at 190C and set a timer for 20 minutes.
While the sweet potatoes start to cook, prep the turkey schnitzel. You will need 3 small bowls or plates for this.
Whisk the egg and place into one bowl, the flour in another and the ground almonds in the third. Add the 1 tsp of paprika and ground garlic powder into the ground almond and mix.
Place the turkey fillets, one by one, into the flour first, to lightly coat, then coat with the egg, and finally with the ground almond coating (ensuring it’s fully coated).
Place the turkey into the oven with the fries, and cook for another 20-25 minutes.
Boil up your peas and leeks (or any other veg you may like) and then serve all together.
