2 medium sweet potatoes
1 tsp olive oil
½ a small red onion
Salt and pepper to taste
Fresh coriander to garnish
Preheat the oven to 200C.
Cut the sweet potato into wedge shapes and place on a baking tray. Drizzle with the olive oil, some salt and pepper and bake in the oven for about 30-40 minutes. This will depend on the size of your wedges.
Make the guacamole by finely dicing the red onion and place it into a small mixing bowl. Add the juice of half a lime.
Then mash in the avocado, season with salt and pepper and garnish with fresh coriander.
Dip the wedges into the guacamole and enjoy.
