Cooking Time: 5 Minutes
Serving Size: 4 Fritters
1 medium sweet potato, peeled and grated
1 handful of fresh spinach
30g ground oats
Salt, pepper and crushed chilli
Place the grated sweet potato and spinach in the microwave for about 2 mins to soften.
The add the rest of the ingredients and mix to combine.
Place in a frying pan with olive oil and cook on both sides.
Top with some smoked salmon and smashed avocado and serve.
