Cooking Time: 5 Minutes
Serving Size: 12 Balls
1 cup oats
1 tsp cinnamon
1 tsp vanilla extract
1 tbsp chia seeds
1/3 cup maple syrup or chicory root syrup (I use Homespun)
1/2 cup smooth peanut butter
30g 85% dark chocolate, cut into small chunks
Mix all ingredients together in a bowl until well combined.
Leave in the fridge for about 30 minutes-1 hour to firm up, then roll into balls. The recipe should make about 12 balls.
Store in the fridge for up to 5 days, or freeze.
