Cooking Time: 15 Minutes
Serving Size: 3 Pancakes
75g buckwheat flour
1 tsp baking powder
½ tsp onion granules
75ml almond milk
1/2 small tin of drained sweetcorn
Salt and pepper to taste
Mix the flour, baking powder and onion granules together.
Then add the egg, milk, salt and pepper and whisk with a whisk or in a blender to combine and form a smooth batter.
Add in the sweetcorn and mix in with a spoon.
Heat your oil in a small frying pan, then add about 1/3 of the batter and fry on both sides (flip when bubbles start to appear).
Repeat until batter is used up.
Top with anything you like, such as a poached egg, smashed avocado, smoked salmon or some fresh coleslaw.
