Ingredients:
150g dark chocolate (70% + cocoa)
6 dried Apricots finely chopped
Handful of chopped Brazil nuts
Handful of slices almonds
Handful of goji berries
Handful of dried cranberries
60g quinoa puffs
Chopped pistachios for topping
Method:
1. Melt the chocolate in a glass bowl over boiling water and pour over all the ingredients mixed in a bowl
2. Make sure it’s fully combined and coated in chocolate and place into a shallow tray
3. Top with chopped pistachios and the remained of melted chocolate
4. Place into the fridge for at least 1 hour to set
