Ingredients:
1 medium pumpkin
1 tin of chickpeas
2 tbsp tahini
Juice of ½ a lemon
1 tbsp olive oil
2 garlic cloves
1 tsp ground turmeric
Salt and pepper
Method:
Peel and chop up the pumpkin, into medium sized chunks, drizzle with olive oil and roast in the oven at 200C for about 30-35 minutes.
Remove from the oven and allow to cool for about 5-10 minutes.
Add all the remaining ingredients into a food processor and mix until smooth.
Top with some seeds and chilli oil.
