Ingredients:
200g or 1/2 can pumpkin puree
6 organic dried apricots
4 medjool dates
1 tbsp maple syrup
2tbsp peanut butter
1 cup dedicated coconut (plus extra for rolling)
1/2 cup coconut flower
1 tsp ground cinnamon
Method:
Place all ingredients into food processor until well combined.
Roll into balls and roll in coconut.
Place in the fridge for a few hours to firm up.
