Ingredients:
3-4 medium sweet potatoes
1 tbsp olive oil
3 sprigs of spring onion, chopped
2 large handfuls of kale
Salt and pepper to taste
For the dressing:
1 tbsp olive oil
1 tsp white wine vinegar
1 tsp honey
Salt and pepper
Method:
Preheat the oven to 200C.
Chop the sweet potatoes into small cubes (leaving the skins on), drizzle with olive oil and place in the oven for 20 minutes.
Remove any large stalks from the kale, and the place over 1 tsp olive oil and massage into the kale with your hands. (this softens the kale), then sprinkle over some paprika.
Place in the oven for about 7 minutes.
Combine both the sweet potato and kale in a bowl.
Top with the chopped spring onion and toasted pine nuts.
To toast the pine nuts, place then in a small frying pan and heat for a few minutes until browned.
Mix dressing ingredients together and pour over the salad before serving.
