Ingredients:
1 large avocado
1 bunch of coriander
1/2 red onion, chopped
Salt and pepper to taste
Splash of lemon juice
Method:
Finely dice the onion, and place into a bowl with the lemon juice.
Add in the whole avocado and mash until creamy, but still a little lumpy.
Add to salt, pepper, and the chopped coriander.
Transfer into a serving bowl and top with more coriander.
Serving suggestion: Use as a dip with crackers or vegetable sticks.
