Ingredients:
160g dried figs (or 9 large)
75g walnuts
50g almonds
1 tsp vanilla extract
½ tsp mixed spice
½ tsp ground cinnamon
1 tsp coconut oil
Some desiccated coconut to coat the outside
Method:
Roughly chop the dried figs, and place into a food processor with all the other ingredients
Blend for a few minutes until the nuts are broken into much smaller pieces
The mixture should stick together when you touch it with your hands
To form the balls, roll the mixture between your hands into a even ball shape
Repeat this until you have about 8 balls
Roll them in the desiccated coconut, then place in the fridge for about an hour to firm up
