80g coconut flour

1/2 tsp baking powder

1/2 tsp baking soda

1/2 tsp cinnamon

1/4 tsp nutmeg

1/2 tbsp vanilla extract

1 cup of fresh cranberries

45g melted coconut oil

50g honey

Zest from 1 orange

125ml orange juice

Pinch of salt

4 eggs (room temperature)


Preheat your oven to 180C.

Combine the dry ingredients in a large bowl.

Mix wet ingredients together in a smaller bowl.

Combine the wet and dry ingredients.

Fold in the cranberries and orange zest.

Place in a lined loaf tin and bake for about 40 minutes.

Allow to cool before serving and tucking in!
