Ingredients:

400g green lentils
2 x 400ml cans of coconut milk
1 tsp ground turmeric
1 tsp cinnamon
2 tsp chilli powder
11/2 tsp ground cumin
1 tsp garam masala
2 garlic cloves, chopped
Fresh coriander or chopped chilli to serve
2 handfuls of fresh spinach
Salt and pepper to taste
Water to add during cooking

Method:

Add all ingredients into your saucepan and heat over a medium heat until it starts to bubble. Turn down the heat and leave it uncovered to cook for around 2 hours, stirring and adding water if needed.
Just before it is ready to serve, add in the fresh spinach until it is wilted and combined with the dish.
Serve with chopped coriander or chopped chilli and have along side some meat, chicken or fish.
