Coconut ‘Bounty’ Bars

Ingredients:

5 pitted medjool dates
150g desiccated coconut
1 tbsp pure maple syrup
1 tsp melted coconut oil
100g 85% cocoa dark chocolate

Method:

Pit and soak the dates in boiling water for about 15 minutes to soften.
Add the coconut, dates and maple into a food processor and whiz until fully combined, and sticky.
Mould the mixture into oblong shapes (like bounty bars) and place onto some baking paper.
Leave to firm up in the fridge for an hour.
Melt the dark chocolate in a bain marie style, over the hob.
Once melted, place eat bar into the bowl of chocolate and move around until fully coated.
Place coated bars back onto baking paper, and leave to set in the fridge for about 2 hours, or overnight.

Serve and enjoy!
