Ingredients:
1 cup almond flour
1/4 cup coconut flour
1 tsp baking powder
1/4 tsp salt
6 tablespoons room temperature coconut oil
3/4 cup Coconut sugar
6 tablespoons almond butter
1 1/2 tsp vanilla extract
1 egg
100g 85% dark chocolate broken into pieces
Method:
Combine coconut flour, almond flour, baking powder and salt in a small bowl.
In a large mixing bowl mix together the coconut oil and coconut sugar with an electric whisk for about 1 minute.
Add in the almond butter and continue to mix. Then add in the egg and mix on a low speed until combined.
Add the dry ingredients to the wet ingredients. Add the chocolate chunks and then chill the dough for 1 hour.
Preheat the oven to 175 degrees celsuis.
Divide the mixture into 8 balls and flatten slightly on baking parchment.
Bake for 13 minutes and leave to cool.
