Chickpea Cookie Dough
Cooking Time: 5 Minutes
Serving Size: 8 Servings
1 can chickpeas (drained)
2 tbsp peanut butter
1/4 cup maple syrup
½ tsp vanilla extract
1/4 cup chopped dark chocolate (I used 85% cocoa)
Place all ingredients (apart from the chocolate) into a food processor or strong blender.
Blend until well combined, then fold in the chopped chocolate.
Keep in the fridge in an airtight container for up to 4 days.
