Cooking Time: 15 Minutes

1 tbsp extra virgin olive oil
1 onion, chopped
1/2 broccoli head, chopped
1 minced garlic clove
1 cup frozen green peas
1 whole cauliflower (blended into a rice consistency) or you can buy pouches with it already blended!
3 tbsp tamari (gluten free soy sauce)
1 1/2 tsp ground turmeric
Heat the olive oil in a large saucepan, and then add the onion and broccoli for about 5 minutes until they start to soften.
Add the garlic and stir for a few minutes.
Add in the peas, cauliflower, turmeric and tamari, and stir to combine. Cover with a lid and let it cook on a medium light for about 7 minutes, stirring occasionally.
Make a well in the middle of the pan and crack in 2 eggs. When they start to cook, scramble them and just before they set, stir into the rest of vegetables in the pan.
Once fully combined, season with salt and pepper to taste, and then serve.
It’s really tasty hot but can be stored in the fridge for a few days to enjoy another time!
