Broccoli, Pea & Mint Frittata
Cooking Time: 15 Minutes
Serving Size: 3-4 Servings
1/2 cup frozen peas
40g cheese (optional)
A small handful fresh mint (or any other green herb)
Salt and pepper
Chop up the broccoli into small florets, and chop up the stem into small cubes.
Boil the broccoli florets for about 5 minutes, then add in the peas and cook for a further 3 minutes. Drain and set aside.
While the veg is boiling, add some oil to a frying pan, then add in the chopped broccoli stems and cook until they colour.
Add in the drained boiled veg, followed by the whisked eggs, salt, pepper and chopped mint.
Cook on the hot on a low heat for about 5 minutes (covered with a lid).
Grate or crumble the cheese over the top, then place under the grill for a further 5 minutes, until egg is fully cooked and cheese is melted.
