Ingredients:
2 salmon fillets
1 tbsp Olive oil
1 tbsp of Zataar spice (or any spice of your choice)
1 tbsp Lemon juice
1 packet of precooked quinoa
Spring onion (1-2 stems)
1 red bell pepper
1 cup of frozen peas
1 Avocado
Fresh chopped basil
1 tsp toasted sesame oil
Method:
- Mix the zataar with the olive oil to form a paste. Spread this over the salmon fillets and bake in the oven for about 14 -15 minutes at 200C.
2. Mix the precooked quinoa with chopped red pepper, spring onion, defrosted peas, chopped basil, avocado, lemon juice and sesame oil.
3. Season with salt and pepper.
